This Harbour Esplanade café is Brian Tung’s contribution to the ever growing Melbourne Coffee Scene. It’s the culmination of 3 years dedicated to learning, exploring, and networking. Having moved to Melbourne from Taiwan less than a decade ago, Brian fell in love with its coffee culture. Any spare time was spent competing in local latte art competitions, and attending events sharing an unrelenting thirst to absorb as much caffeine and knowledge as possible with fellow enthusiasts.
The opportunity of a lifetime presented itself at the beginning of the year, and Brian grabbed this opportunity. BITO was born out of a desire for excellence and a commitment to consistency. The ‘Bring in, take out’ ethos captured in the café’s name sums up its simple purpose- you bring yourself in, and the team will make sure you leave gratified. Consistency is assured by the use of locally roasted coffee from Cote Terra, and innovative machinery such as the new Mythos 2 grinder, and Café Racer. An appreciation for quality is recognised, and built on a prerequisite for consistently providing it.
Guests can sit in the sun soaked venue and enjoy their daily dose of vitamin C(affeine), while savouring the scenic view of Melbourne’s Docklands, where iconic trams dash along the esplanade daily. Freshly made pastries are brought in from Prahran Market each morning, and pair well with Cote Terra’s Flying Dutchman Blend that has a sweet full body, with lingering milk chocolate notes. Single origin beans are also available for black coffee, including batch brew.
BITO opens daily from 7am till 3pm, and can be found at 10/198 Harbour Esplanade, Docklands.
